Samosa, whether vegetarian or chicken-filled, is a delicious snack enjoyed by many. Here's a basic recipe for both types:


Vegetarian Samosa:


 Ingredients:

- 2 cups all-purpose flour

- 4 tablespoons vegetable oil

- 1 teaspoon salt

- Water, as needed

- 2 large potatoes, boiled, peeled, and diced

- 1 cup peas, boiled

- 1 small onion, finely chopped

- 2 green chilies, finely chopped (optional)

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1 teaspoon garam masala

- Salt, to taste

- Oil for deep frying


 Instructions:


1.Prepare the dough:


   In a mixing bowl, combine flour, salt, and oil. Rub the oil into the flour until it resembles breadcrumbs.


  Slowly add water and knead to form a firm dough. Cover the dough and let it rest for 30 minutes.


2.Prepare the filling:

   Heat oil in a pan and add cumin seeds. Let them splutter.

   Add chopped onions and green chilies. Sauté until onions turn translucent.

   Add diced potatoes, boiled peas, coriander powder, garam masala, and salt. Mix well and cook for a few minutes. Remove from heat and let it cool.


3.Shape the samosas:


   Divide the dough into small balls. Roll each ball into a thin oval-shaped disc.


   Cut the disc in half. Take one half and fold it into a cone shape, sealing the edge with water.


   Fill the cone with the prepared potato filling and seal the open edge using water, ensuring the samosa is tightly sealed.


4.Frying:

   Heat oil in a deep frying pan.


   Once the oil is hot, gently slide in the samosas and fry until they turn golden brown and crisp.


   Remove and drain excess oil on paper towels.


5.Serve:


   Serve hot with chutney or sauce of your choice.

For chicken samosas, you'll follow the same steps as above, but replace the vegetarian filling with a chicken filling. Here's how to make the chicken filling:


Ingredients:


1 cup cooked chicken, shredded


1/2 cup mixed vegetables (carrots, beans, peas), finely chopped and boiled


1 small onion, finely chopped


2 cloves garlic, minced


1 teaspoon ginger, grated


1 teaspoon cumin seeds


1 teaspoon coriander powder


1 teaspoon garam masala


Salt, to taste


Oil for sautéing


Instructions:

   Heat oil in a pan and add cumin seeds. Let them splutter.


   Add chopped onions, minced garlic, and grated ginger. Sauté until onions turn translucent.


   Add shredded chicken, boiled mixed vegetables, coriander powder, garam masala, and salt. Mix well and cook for a few minutes. Remove from heat and let it cool.
